Apple Cinnamon Muffins

Whole wheat Apple Cinnamon Muffins make a delicious breakfast!

Happy Monday!  How about some Apple Cinnamon Muffins?

It’s been a quiet week over here on the blog; I decided to take a few days off from writing in order to focus on other things, but I’m back at it as of today.  (That is, until we are in the midst of moving to our new house.  Then I may need to take another break.) 🙂

Poppy Seed Chicken

Add this easy Poppy Seed Chicken recipe to your list of weeknight dinner ideas! 🙂

I’ve been rather quiet on the blog this week, as there are other things that have held my attention.  A big part of it is that, *drumroll*, we are moving!  The next few weeks are going to involve a bit of packing (thankfully we don’t have very much stuff), so my posting frequency on this blog may slow down a little until after we’re settled into our temporary living situation before our new house is finished.  I’m excited though, partly because I’m going to have a dishwasher in the new house!  Woohoo!  (That may sound silly, but I am grateful for dishwashers and will never take them for granted again.)

Sugar Cookie Sandwiches

Super soft and chewy sugar cookies are put together with fluffy frosting to make delicious Sugar Cookie Sandwiches.

A couple of times a year, I go to the mall.  My version of shopping at the mall usually involves walking around briskly without buying much of anything.  But one place where I usually like to stop is the Great American Cookies shop.  Reason being, they have cookie sandwiches (whaaattt?)

Oregano Chicken Burgers

Healthy Chicken Burgers – juicy and full of favor.  I even snuck in some rolled oats for extra nutrition. 🙂

Happy Valentine’s Day, everyone!  When I was a kid, I loved Valentine’s Day.  I was homeschooled, and my siblings and I knew that on Valentine’s Day morning there would be a mini heart-shaped box of chocolates waiting on each desk before school.  Those chocolates were a special something I always looked forward to.  Oh, that and the fact that my dad usually bought my mom a huge box of chocolates.  (It had to be huge because she would invariably end up sharing…woohoo!)

Apple Oatmeal Muffins

A delicious and healthy breakfast idea – these muffins are made with whole wheat flour, lots of oats, fresh apples, and Greek yogurt.

Most of the time I don’t mind getting out of bed early, but this morning was one of those “I’m dragging a little” mornings.  The fatigue might be explained by the series of very strange dreams I had last night, which I am now unable to remember.  It is amazing what kind of scenarios my mind is capable of creating while I’m asleep.  I’ve been a spy in multiple wars, a ninja, a brave explorer, a detective (think Sherlock Holmes), and all manner of other interesting personalities over the years.

Marbled Blonde & Chocolate Brownies with Salted Caramel

These delicious Blonde & Chocolate Brownies are made from scratch – no store bought mixes – and drizzled with salted caramel.  Add some fun sprinkles to make them perfect for any holiday!

Ta da!  Marbled Blonde & Chocolate Brownies with Salted Caramel!  I made these epic brownies for dessert yesterday, and I was a little excited about it. 😀  Instead of waiting to share the recipe next week, I decided to go ahead and post it today.

Plum Pudding Cake

A slightly healthier dessert option – this Plum Pudding Cake is made with whole wheat flour and is free of butter or refined sugar.  The cake has a cinnamony pudding layer topped with a cake-like layer that is crispy golden around the edges – add the fresh plums and you have a dessert that tastes great on its own or with a little ice cream. 🙂

Happy dessert Friday!  (Or at least that’s what usually happens around our house.)  I am planning to work on a really fun new Valentine’s Day dessert recipe later today, but right now it’s time to stop for a second and share this somewhat “healthified” Plum Pudding Cake from last week. 😉

Crispy Cheese Breadsticks

Made with whole wheat flour, cheddar cheese, and olive oil, these baked cheese breadsticks are perfectly crispy. 🙂

How the Crispy Cheese Breadsticks came about:  I was flipping through my recipe box looking for some new dinner ideas, and I found a crumpled up piece of paper with scribbles on it.  After staring at the paper for a few minutes, I was able to decipher the foreign language (aka my handwriting), and the recipe below is what it said.  For the benefit of any readers, I have typed up the recipe rather than posting a picture of the paper covered with creases and scribbles of the unknown language that only I can (occasionally) understand.
