Grapefruit Green Smoothie

Tart and refreshing, this healthy smoothie is full of grapefruit and fresh spinach, and is sweetened with a little honey.

Ok, people, listen up.  It is currently 30 degrees Fahrenheit at my house in Florida, and it got down to 25 last night.  (WHAT?  Is this Florida?)  I like the chilly weather, but I’m pretty sure my poor little palm bush is shivering outside the window.  I half expect my plants to pull up roots and start knocking on the door any second.  “Let us in!  Let us in!  It’s cold out here!”  Either that, or the mosquitoes will start knocking.  I won’t be letting those little buggers in though.  Mwahaha.  DIE, mosquitoes, DIE.  (Unfortunately their eggs don’t die in freezing temperatures, so we’ll still have to deal with them in the spring.  Ugh.)

Zucchini Pie

If you like zucchini, you’ll love this Zucchini Pie!  A whole wheat crust is filled with zucchini, Colby-Monterey Jack cheese, eggs, and a variety of seasonings.

A few weeks ago, I glanced over the categories on my blog and took note that I don’t have many vegetarian options as far as main dishes are concerned.  My husband and I aren’t vegetarian ourselves, but that doesn’t mean we don’t enjoy a vegetarian meal here and there.  One of our favorites is this Zucchini Pie, so I decided it was about time I share the recipe.

Cranberry Orange Chocolate Chip Muffins

These whole wheat muffins are made without butter or refined sugar, and are bursting with cranberries, orange zest, and dark chocolate chips!

Even though Thanksgiving is long past, I still have leftover cranberries sitting in my freezer. 🙂  (I like to stockpile when they are in the grocery stores during November.)  I used some of them for this Cranberry Orange Smoothie about a week ago, but I still had a few cups left over.  Say hello to Cranberry Orange Chocolate Chip Muffins!

Salted Caramel Brownie Pizza

A special treat – this from scratch Brownie Pizza is topped with white chocolate chips and mini marshmallows, and drizzled with salted caramel.

Happy Friday!  It’s been a busy week and we made it to the end, so we’re celebrating with Salted Caramel Brownie Pizza.  Actually, we kind of “pre-celebrated” with this pizza last weekend so I could share it on the blog.  Haha. 😀  So today I am doing all sorts of other exciting Friday things, like catching up on washing clothes. 😉

Chili Cheddar Bread

A simple yeast bread is made better with chili powder and shredded cheddar cheese – perfect alongside a bowl of soup or chili!

Even though I like sunshine, there is something happy about rainy, foggy days.  They make me want to curl up with a book, do some baking or house cleaning, tackle an indoor project that needs fixing, or sit down at the piano and play and sing my favorite songs.  Rainy, foggy days also make me think about certain foods, particularly soups and homemade breads.

Peanut Butter Chocolate Banana Smoothie

The weather outside is rainy and dreary, which means it’s a good day to blog.  I’ve been working on a lot of new recipes over the past week, and am looking forward to sharing them soon!  Next on the list is this Peanut Butter Chocolate Banana Smoothie.  Casey loves smoothies, and Sunday evenings are designated homemade popcorn and smoothie nights at our house.  It gives me a break from cooking, and who doesn’t enjoy the sweet and salty combination of homemade popcorn and a fruit smoothie?

Maple Oatmeal Cups

Made with whole wheat flour and oats, these healthy muffins also contain yogurt for protein, and are sweetened with pure maple syrup!  Maple Oatmeal Cups are perfect for breakfast or healthy snacking. 🙂

The other day I was thinking to myself that I should rename my blog, “Muffin Madness”, because I have so many muffin recipes.  I just like to make muffins!  They’re so easy to mix up, and the flavor combinations seem endless.  Plus, you can either have dessert muffins (basically cupcakes) or healthy muffins!  Take your pick. 🙂

Photos of the Week – Ice Storm Memories

I just realized that it’s been almost four weeks since I last shared a “Photo of the Week” post!  December has flown by, and it was a ridiculously busy month for us.  I enjoyed it but am also relieved that it is over.

All the cold weather we’ve been having the past few days has got me thinking about snow and ice.  We didn’t see any here, but I admit it would be nice to have a little snow.  The ice, on the other hand, can stay very far away.
