Barbecue Pasta Bake

This easy weeknight dish takes about 40 minutes to prepare and only requires six ingredients.  The simple combination of ground chicken, barbecue sauce, whole wheat pasta, and cheese is great for picky eaters!

Good morning, folks!  Was anyone else up early watching the super blue blood moon?  I woke up feeling kind of tired, but then I remembered the lunar eclipse and I was wide awake.  I leaped out of bed, ran out to the car in my pajamas, and drove around the neighborhood in freezing temperatures with my window rolled down so I could catch a glimpse of the moon.  There was a good spot to watch it a short distance from my house, so I was able to park and enjoy the eclipse without a lot of trees obstructing my vision.

Old Fashioned Buttermilk Pie

Old Fashioned Buttermilk Pie is sweet and tangy with a perfectly flaky crust!  🙂

What better way to start out the week than with a slice of Old Fashioned Buttermilk Pie?  If you’re following me on Instagram, you may have noticed that I posted a short “behind the scenes” clip of this pie on Friday.  I had never actually eaten Buttermilk Pie before, but I knew I would love it.  (Any baked good containing buttermilk is almost always amazing.)  Anyway, we gave it a try on Friday evening, and I enjoyed every bite.  I also may have eaten more than one slice.  (Don’t tell.)  My recipes don’t always come out perfect the first time, so I was happy that this one did.

Butternut Oat Breakfast Bars

These lightly sweetened and healthy breakfast bars have two layers:  a layer of oats, whole wheat flour, and Greek yogurt is topped with a layer of sweetened butternut squash.

If you’re following me on Instagram, you might have seen some “behind the scenes” videos of what I was working on in the kitchen during my spare time yesterday afternoon.  These Butternut Oat Breakfast Bars are the result of one of the recipes I was testing.  They turned out well (perfect for breakfast), and so I am sharing them on the blog this cloudy Saturday morning!

Blueberry Dessert Salad

A simple treat that feeds a crowd!  This dessert has two layers – a blueberry filling and a sweet sour cream/cream cheese topping!  Sprinkle with walnuts if desired. 🙂
