Whole Wheat Banana Bread

This soft and moist Banana Bread is made with whole wheat flour, sweetened with pure maple syrup and Sucanat, and uses olive oil instead of butter!

Considering the popularity of banana bread, how is it possible that I don’t have a recipe for it on my website yet??

There’s actually a very good reason.  (A moment of honesty here.)   Historically, I have not been the best at making good banana bread.  Other sweet breads usually turn out fine in my kitchen, but not banana bread.  I have a tendency to turn out loaves of bread that are soggy on the inside and too done on the outside, and I have often been at a loss as to why banana bread is so tricky to make.  Only in the past couple of months have I finally found a recipe which works well for me.

Lemon Broccoli Chicken

Good morning, allergies!  (Yes, that would seem to be the current state of things.)  This spring has been unusually interesting in the allergy department, and I won’t be sad when it’s over.  Right now my left eye looks a bit like someone whacked me in the face. O_o  (And this is coming from someone who usually isn’t bothered by the pollen!)  Meanwhile, the humidity outside is at 100% and thunderstorms are in the forecast all day.  I love storms, so I’m not complaining. 🙂

Peach Cobbler Muffins

Full of fresh peaches and containing Greek yogurt for protein, these light and fluffy whole wheat muffins are good for a quick on-the-go breakfast. 🙂

I post so many muffin recipes that I have seriously thought of renaming my blog and just specializing in muffins.  Today’s recipe is one that I tested a few weeks ago, and am planning to make again today.  Casey informed me that they taste like peach cake, which, considering the ingredients as a whole are on the healthy side, is definitely a success in my mind.  Who doesn’t love protein filled, whole wheat muffins that taste like peach cake?  Anyone?

Photos of the Week – Daffodils

Hey all!  It’s a beautiful weekend out of doors and I am almost finished with packing.  We will soon be vacating our current residence.   I’ll miss this cute, little house, but I’m excited about our new house as well.  It will be an “adventure”.  😉

Anyone who peruses this blog regularly may find themselves tired of flower photos.  (Sorry, I can’t help it.  Spring is in the air, and with it flowers and bright colors.)  I was just thinking the other day about how I miss the daffodils.  I’ve yet to see any here in Florida.  Maybe it doesn’t get cold enough?

Easy Peach Cobbler

This easy and delicious peach cobber only requires 15 minutes to assemble and 30 minutes of baking time.  It has four cups of peaches and a buttery, sweet, whole wheat crust!

My typical Monday morning blog post is a little late today.  I spent much of the day running errands, packing, and cleaning house. 🙂 Despite the busyness, I managed to sneak in a little time practicing my guitar.  (There’s always time for music, right?)

Lemon Almond Poppy Seed Bread

Lemon Almond Poppy Seed Bread – a moist sweet bread made with whole wheat flour and sweetened with Sucanat, and drizzled with a tart lemon glaze.

Since the flowers are blooming and the weather is warmer, I’ve been thinking more about summery foods, and recently that led to the making of a Lemon Almond Poppy Seed Bread recipe.  Bring on all the fresh fruit!  I love lemon baked goods, and this very moist bread with its tart lemon glaze is right up my alley.

Black Bean & Rice Burritos

These healthy, vegetarian Black Bean & Rice Burritos are hearty and delicious.  🙂  

While I truly like parts of every season of the year, my favorite time is probably spring.  There is something about those first few days of warmer weather, when the sun pokes through the clouds and the beautiful flowers burst into blossom.  I opened our windows this morning to let some fresh air into the house, and I could smell the aroma of flowers wafting through the kitchen and hear the birds chattering to each other in the trees outside.
