For all the PB & J lovers out there – an energy boosting snack that’s ready in ten minutes, and you only need three ingredients!
If you’ve been perusing some of my blog ramblings in addition to using my recipes, you might know that my husband and I are currently in the transitory state of moving to a new house. And hey, if you haven’t been reading the convoluted writings and are simply taking the recipes instead, I really don’t blame you. Ain’t nobody got time to read this stuff. (Please note: this is the only instance you will ever see me use the want-to-be-a-word-but-actually-isn’t-a-word “ain’t” on this blog.)
Just because I’m from the hills, doesn’t mean I have to talk like it. No offense to all those of you who do use that “word”…but it’s still not really a word.
(Sorry. I love you guys; go ahead and say “ain’t” if you want to. I won’t judge. Not out loud anyway.) 🙂
Where was I going with all of that? I just got very distracted.
Oh! What I was about to say is that moving and such has me reaching for some easier recipes when it comes to snacks and meals. I’m delighted that I have full access to the kitchen of the family members we are staying with (thank you, grandparents!), but even so I like to keep things a little simpler when in transition.
In light of that, yesterday I mixed up some of these PB & J Energy Bites for my husband to take with him to work. They have a nice little protein punch to help him when he starts getting a little tired around mid-afternoon. (Don’t we all start feeling droopy around 2 pm? And then if you’re like me you’re wide awake from 8 pm to midnight. But I digress again.)
Plus, these little bites are super tasty and only take about ten minutes to throw together.
I’m guessing this snack would be a hit with kids as well, so if you have kids maybe give them a try! Although, even ten minutes can be hard to find sometimes when you’re a busy mother of little ones. 🙂

PB & J Energy Bites
Ingredients
- 2 1/4 cups rolled oats
- 2/3 cup peanut butter
- 1/3 cup favorite jelly (I used grape)
Directions
Combine all ingredients in a bowl and stir until well combined. Form into 1-inch balls using hands and place in single layer in container. Store in refrigerator.
