Happy Valentine’s Day, everyone! When I was a kid, I loved Valentine’s Day. I was homeschooled, and my siblings and I knew that on Valentine’s Day morning there would be a mini heart-shaped box of chocolates waiting on each desk before school. Those chocolates were a special something I always looked forward to. Oh, that and the fact that my dad usually bought my mom a huge box of chocolates. (It had to be huge because she would invariably end up sharing…woohoo!)
As an adult, I still hold to my conclusion that the most exciting thing about Valentine’s Day is all the chocolate that goes on sale the day afterward.
Since Valentine’s Day falls in the middle of the week, my husband’s and my celebration will probably consist of a special dinner on Friday evening. I’ll be making his favorite dessert, sugar cookies. (Stay tuned: I’ll share the recipe for those later. 🙂 )
For now, I’m posting a super easy recipe for chicken burgers. I like a good beef burger on occasion, but recently I’ve discovered that chicken burgers can be just as tasty (dare I say it?) as regular beef burgers. Therefore, I have been trying various combinations of seasonings and flavors because, hey, I like to have options when it comes to fixing burgers. If you prefer to stick to regular burgers with a slice of cheese on top, good for you; they’re pretty tasty when they’re made right. But I like to try something different every once in awhile. 🙂
This recipe is heavily adapted from a burger recipe in one of my Taste of Home cookbooks. Note that, while I called for provolone cheese in the recipe, I did not serve mine with cheese. That’s ok. These burgers are good plain, if you forget the cheese like I did. But they would taste even better with a slice of cheese on top.
Oregano Chicken Burgers
- 1 lb ground chicken
- 1/2 cup rolled oats
- 1 Tablespoon dried onion
- 1 Tablespoon dried oregano
- 1 Tablespoon lemon juice
- 1 1/4 teaspoons garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 4 hamburger buns
- 4 slices provolone cheese (optional)
Combine all ingredients EXCEPT hamburger buns and provolone cheese in a large bowl. Mix well using a spoon or your hands. Shape into 4 patties. Grill, covered, over medium heat OR cook in skillet, covered, over medium heat, until burgers are cooked through/no longer pink, (about 5-8 minutes each side).
Top each burger with a slice of cheese and serve on hamburger buns.
