Happy Friday! It’s been a busy week and we made it to the end, so we’re celebrating with Salted Caramel Brownie Pizza. Actually, we kind of “pre-celebrated” with this pizza last weekend so I could share it on the blog. Haha. 😀 So today I am doing all sorts of other exciting Friday things, like catching up on washing clothes. 😉
When our laundry starts growing out of the basket and beginning to show signs of reason and thought, it’s time to tackle it. I’m not sure why we had so many dirty clothes this week, but they are happily spinning around in the dryer right now, and I have averted the potential crisis of an intelligent laundry entity taking over the house.
This evening I have a friend coming over to watch one of my favorite movies with me, Ben-Hur (1959 version). It is so hard to pick favorites, but Ben-Hur is definitely in the top ten, somewhere up there with Lord of the Rings and the Harry Potter series. I need to compile a list of my top ten movies sometime. Fiddler on the Roof would have to squeeze into that list as well, and White Christmas.
I’m not sure how I got from Lord of the Rings to White Christmas. I’m now envisioning Bing Crosby facing Sauron. A sing-off for control of the One Ring? Crosby would have that in the bag. That is, unless Sauron is hiding some serious talent that we don’t know about. *pictures Sauron staring down Bing Crosy and then breaking into Nessun Dorma*
Ummm, I digress.
So, anyway, let’s talk about this Salted Caramel Brownie Pizza.
I’ve made brownie pizzas before and really enjoyed them, but I’ve always wanted to come up with a delicious brownie pizza that doesn’t use a box mix. Most other recipes I’ve found use a mix. There’s nothing wrong with that, but personally I prefer to make my own.
Well, with this pizza I finally succeeded! It has perfectly chewy edges, with a soft, gooey brownie center. The marshmallows, white chocolate chips, and salted caramel take it right over the top. When I made this last weekend I asked Casey and some of my in-laws to be my taste testers, and they gave it two thumbs up. So, here you go!
Salted Caramel Brownie Pizza
- 1 1/4 cups whole wheat flour
- 1 cup unbleached, all purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 2/3 cup butter, melted
- 1 cup packed brown sugar
- 1 cup Sucanat (or you can substitute with brown sugar)
- 2 eggs, room temperature
- 1/2 cup dark chocolate chips
- 1/2 cup white chocolate chips
- 3/4 cup miniature marshmallows
- 1/4 cup salted caramel topping
Preheat oven to 350 degrees Fahrenheit. Lightly grease a large pizza pan and set aside.
In a medium sized bowl, stir together flours, baking powder, and salt. In a separate, larger bowl, beat butter, brown sugar, and Sucanat together. Beat in eggs. Place the 1/2 cup dark chocolate chips in a microwave safe bowl, and heat in 15 second bursts, stirring each time, until chocolate is melted. Blend chocolate into butter and sugar mixture. Add dry ingredients to wet and stir until mixed. Batter will be thick. Place batter on pizza pan and gently press evenly into a 10-inch circle of about 3/4ths inch thickness. (Be sure to leave a few inches between batter and edges of pan because it will spread a bit while baking.)
Bake for 15-20 minutes or until center is just set and edges are cracking. Remove from oven and immediately sprinkle with marshmallows and white chocolate chips. Drizzle with salted caramel topping. Slice and serve!
