A simple and healthy side dish, these lightly buttered carrots are tossed with a hint of honey and parsley!
Well, it’s the weekend! And yes, I am up at 4 a.m. Honestly, this has been the strangest week all year. (See what I did there?) After flu, possible strep, and a bad flare up of TMJ, I am finally starting to get some relief. My jaw hurt so bad the past two days that it felt like it was going to fall off. If you do see it lying around somewhere, leave it. I don’t want it back.
I promise I’m not always sick or falling apart like I have been the past week, for anyone who is wondering if that’s all I talk about. 😀 I’m very thankful to be in good health most days.
Speaking of health, haha… For those of you who are trying to get back to healthier eating after all the holiday goodies (or if you just love veggies like me), I thought I would share an easy recipe for Sweet Parsley Carrots. I made a big pot of Chicken & Dumplings earlier this week, and threw together some carrots to go along with it. We enjoyed the way they turned out, so here you go!
You only need a handful of ingredients and less than 30 minutes to prepare this easy side dish.

Sweet Parsley Carrots
Ingredients
- 4 cups sliced carrots
- 1 Tablespoon butter
- 2 teaspoons honey
- 1 teaspoon dried parsley
- 1/2 teaspoon salt
- pinch of pepper
Directions
Place sliced carrots in a medium sized saucepan and add water until carrots are covered. Bring to a boil and simmer until carrots are fork tender. Drain off water.
Add all other ingredients and toss gently with carrots until butter is melted. Serve!
