Peanut Butter Cup Cookie Cups

These quick and tasty cookie cups each have a peanut butter cup in the center, and only require five ingredients!

Today is Day 14 of new cookie and candy recipes before Christmas!  These Peanut Butter Cup Cookie Cups are the last recipe I’ll be sharing in this fun dessert series.  Christmas is in two days, everyone! 🙂  Right now I’m kicked back watching White Christmas while writing a blog post.  I even had chocolate chip coconut pancakes for dinner, which made me very happy.  (It’s the little things, right?)

I know that peanut butter blossom cookies are popular around Christmastime, but I’ve never been a huge fan of them.  Every once in awhile I’ll be in the mood to eat one, but usually I don’t have much interest.  I was thinking about blossom cookies a couple weeks ago, and suddenly thought, “I know; mini cookie cups with mini peanut butter cups inside!  That’s what I want!”

So, these cookies were born.  🙂

Peanut Butter Cup Cookie Cups

  • Servings: 2 dozen mini cookie cups

Ingredients

  • 1 cup creamy peanut butter
  • 1 cup refined sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 2 dozen mini peanut butter cups

Directions

Preheat oven to 350 degrees Fahrenheit.  Lightly grease or line two dozen mini muffin cups and set aside.

In a medium sized bowl, mix peanut butter, sugar, egg, and vanilla until well blended.  Form dough into balls of about 1 1/2 inches each, and press a ball into each muffin cup and up the sides of the cup so that there is some space in the center of each cookie.  (Don’t push the dough up to the very top of the cup or over the sides or the cookies will get a little too done around the edges.)  Gently press a mini peanut butter cup into the center of each cookie cup.

Bake for 10-12 minutes or until top edges of cookies are turning slightly golden and are cracking a bit.  Let cool 10 minutes in pan before removing to cool on wire racks.
