Molasses Cookie Sandwiches with Cream Cheese Frosting

Roll out molasses cookies are cut into fun shapes and put together with cream cheese frosting sandwiched in between – what could taste better?

Hello, all!  Today is Day 10 of Christmas cookies!  I’m sharing a recipe for molasses cookie cutouts with a cream cheese frosting twist.  🙂

This post may contain some rambling.  I’m typically an early morning person, but when my husband’s alarm went off this morning I must have been sleeping hard, because I woke up feeling like I got hit by a truck.  I accidentally fell back asleep and was awakened five minutes later by my alarm, which is set to some sort of screeching, fog horn alert tone.  (In other words, it scared me to death.)  So, now I have a giant cup of tea and am sitting in front of our Christmas tree, trying to shake this groggy feeling.  Remind me to change my alarm to a calmer sound, like ocean waves or harp music or something.

When I was a kid, my parents used to have this alarm clock that was basically the worst clock in the world.  I actually used it as my clock for awhile, but was very careful to make sure the alarm wasn’t on, because it sounded like an extremely obnoxious siren.   It was LOUD.  We’re talking panic inducing loud.  I don’t know why they had that crazy thing, or why we kept it so long, but whatever.  I think it eventually migrated to my brothers’ room, where it stayed for a long time.

I’m fairly certain that, at one point, the oldest of my brothers had three different clocks in his room and all of them were wrong.  However, by looking at all three, he could tell what time it was by some sort of deduction that only he understood.

Funny how times have changed (pun intended).  Now I would rarely see a reason to go to the store and buy a clock, unless it was purely for decorative purposes.  I just use my phone.  When my phone dies, I’m completely lost and confused as to what universe I’m in and where I’m supposed to be and when, and what is on my to-do list.  On second though, if another hurricane hits, I need a clock.

Despite my phone dependence, I do still write out my grocery list on a piece of paper and carry it and a pen while shopping.  My mom always did that when I went grocery shopping with her, and old habits die hard.  When I was growing up, the nearest grocery store was far enough away that going to the store was more of a once-a-week thing.  Making out a list was important so we didn’t forget anything, as driving back into town was a bit of a hassle.  (I’m sure my mom also got that habit from her parents, as she grew up far enough out in the country that going to town was an all-day event.)  Unlike many people who live in town, (and I still don’t understand this, sorry), we didn’t run to the store five times a week to grab random things.  Even though I live in town now, with grocery stores, restaurants, and gas stations within bicycling distance, it seems very inefficient to run to the store five times instead of once.

I’m very glad that my mom taught me to meal plan and make out a list, so that I don’t waste time going back and forth.  Plus, it probably saves money, because what happens when you go in the store intending to buy one item you forgot?  You come out with ten items.  What happens when you go in without a list?  You come out with things you don’t need, and forget half the things you do need.  (Case closed.)  I also hate shopping, so that’s definitely a motivator in limiting my visits.  I strongly recommend taking the extra time to plan and limit grocery runs to once a week, even if you do live in town.

Anyway, I seem to be more talkative than usual this morning.  I did warn you, right?

I have a lot of favorite cookies, but Molasses Cookies are seriously some of my “favoritest” cookies in the whole world.  The spices and the rich flavor of the molasses are just so good together.

A few days ago, I got to thinking about how amazing cream cheese frosting might taste combined with a molasses cookie.  I also wanted to use a slightly different dough that would be favorable to rolling and cutting so I could make some fun Christmas shapes.

Enter these Molasses Cookie Sandwiches with Cream Cheese Frosting!  While I like all the recipes on my blog, I definitely have favorites, and this recipe is one where I have to say:  Even if you try nothing else, try these cookies.  (Oh, and try the original Molasses Cookie recipe as linked earlier in this post.  So.  Good.)

If you’re looking at this recipe for sometime other than Christmas, you can always get creative with the shapes and cut out the dough however you like.

Molasses Cookie Sandwiches with Cream Cheese Frosting

  • Servings: 2 dozen cookie sandwiches

Ingredients

Cookies:

  • 3/4 cup butter, softened
  • 1 cup packed dark brown sugar
  • 1 egg
  • 3/4 cup molasses
  • 2 cups all purpose flour
  • 1 3/4 cups whole wheat flour
  • 1 1/2 teaspoons baking soda
  • 1 1/2 teaspoons cinnamon
  • 3/4 teaspoon ground ginger
  • 1/2 teaspoon ground cloves
  • 1/4 ground nutmeg
  • 1/4 teaspoon salt

Frosting:

  • 8 oz cream cheese, softened
  • 6 cups powdered sugar
  • 1 teaspoon vanilla
  • 1-3 teaspoons milk, (as needed to reach desired consistency)

Directions

For cookies: In a large mixing bowl, beat butter and brown sugar together until fluffy.  Add egg and molasses and beat well.  In a separate bowl, stir together flours, baking soda, spices, and salt.  Gradually add to wet ingredients, beating until well blended.  Cover dough and refrigerate for about 2 hours or until firm.

Preheat oven to 325 degrees Fahrenheit.  Remove dough from refrigerator and roll out to about 1/8 inch thickness on a lightly floured surface.  Cut dough into desired shapes using cookie cutters.  (Make sure you cut two of each type of shape for the sandwiches!)  Place cookies about 1 inch apart on ungreased baking sheets and bake for 7-10 minutes or just until edges and bottoms of cookies start to turn golden.  The centers of the cookies will still be soft.  Don’t overbake them! Remove cookies from baking sheets to cool completely on wire racks.

For frosting:  Meanwhile, beat cream cheese and powdered sugar together in a large bowl until a thick frosting forms.  Beat in vanilla.  Slowly add milk as desired until icing reaches a spreadable consistency.

Once cookies are cooled, ice half of the cookies and top each iced cookie with a plain cookie to make sandwiches.  Enjoy!
