How about we take a break from all the holiday food, and talk about a simple and healthy dinner recipe? 🙂 I’m a fan of homemade Chicken Fajitas, so today I’m posting my favorite easy recipe for fajitas. (Well, my current favorite that is. These things are always subject to change.)
Sometimes I eat my fajitas over rice, but I also enjoy them wrapped in fresh, homemade flour tortillas. (You can get my recipe for those here.)
When making this dish, make sure you cook the chicken long enough that it is done, but not so long that it becomes tough and dry. There’s nothing like gnawing on tough, stringy chicken instead of juicy, flavorful chicken. (I’m just saying.)

Quick Chicken Fajitas
Ingredients
- juice of 2 small limes
- 2 teaspoons chili powder
- 1 1/2 teaspoons ground cumin
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 3 boneless, skinless chicken breasts, cut into strips
- 1 Tablespoon olive oil
- 1 red bell pepper, cut into strips
- 1 green bell pepper, cut into strips
- 1 orange bell pepper, cut into strips
- 1 onion, roughly chopped
- 1 1/4 cups favorite salsa
- Shredded cheddar cheese (optional)
Directions
In a large bowl or zip top bag, combine lime juice, seasonings, and chicken. Place in refrigerator and marinate for 30 minutes.
In a large skillet, saute peppers and onion with olive oil for 4-5 minutes over medium heat. Add chicken and marinade to peppers and onions. Continue cooking for 10 more minutes or until chicken is cooked through and vegetables are tender. Remove from heat and stir in salsa.
Serve over tortillas or rice and top with shredded cheddar cheese if desired.
