Pecan Pie Bars

A buttery crust is topped with a gooey, sweet layer full of pecans in these delicious and indulgent bars!

Happy Monday!  How is everyone this week?  I’m doing well, but a little tired after a busy weekend.  This week will be a bit of a vacation for me, so I’m looking forward to getting some rest and maybe doing some fun things here and there.  🙂

First on my list of “fun things” is blogging this amazing dessert recipe, Pecan Pie Bars!  I usually think of these bars as more of a Thanksgiving Day treat, but they are so good that I’ve decided they should be on Christmas menus too.  If you like pecan pie but have trouble with pie crust or just want something that requires less work, these bars are for you.

Mmmm…so gooey and delicious.  I made these for Thanksgiving dinner last Thursday and I might have eaten more than one.  (Don’t tell.)  Let’s just say that I’m extra careful to stay on top of my exercise routine during the holidays, since there are so many treats lying around and I can’t get away with as much as I did during high school.  (Those were the days…when I could eat anything and not gain a pound.  Oh well.)

You’ll notice that this recipe contains corn syrup.  Typically I avoid baking with corn syrup for health reasons, but every once in awhile there are certain foods that just don’t have the right texture without it.  These bars fall into that classification.  I’m tempted to experiment with corn syrup substitutes more in the future so I can remove it from my baking altogether, so that may happen sometime soon.  Although, if I’m only using it a couple times a year I figure it’s not going to hurt me.  🙂

Pecan Pie Bars

  • Servings: about 24 bars

Ingredients

Crust:

  • 2 2/3 cups all purpose flour
  • 1/4 cup firmly packed brown sugar
  • 1 cup butter, softened

Filling:

  • 1 cup light corn syrup
  • 1 cup firmly packed brown sugar
  • 4 eggs, lightly beaten
  • 1/4 cup butter, melted
  • 1 1/2 teaspoons vanilla
  • 1/4 teaspoon salt
  • 1 1/2 cups roughly chopped pecans

Directions

Preheat oven to 350 degrees Fahrenheit.  Lightly grease a 13×9 inch baking dish and set aside.

Prepare the crust:  Stir together flour and brown sugar.  Cut in butter until mixture resembles coarse crumbs.  Press evenly onto bottom of baking dish.  Bake for 15 minutes.  Remove from oven and keep oven at 350 degrees F.

Make the filling:  Meanwhile, in a medium sized bowl, combine corn syrup, brown sugar, eggs, melted butter, vanilla, salt, and chopped pecans.  Stir until well mixed.  Pour over crust.  Bake for 30 minutes or until center is just set and bars are golden.  Let cool completely before cutting into squares.
