Chicken Packets

 Always a favorite at our house – chopped chicken, cream cheese, and seasonings are wrapped in crescent roll dough and baked until golden! 

As much as I enjoy trips to the beach and springs, I’m happy to announce that the heat seems to be backing away down here in the sunshine state!  (Watch me say that and then it becomes hot again.)  For the next week, at least, we are supposed to have some gorgeous weather.  It looks like Thanksgiving Day is actually going to be comfortable instead of hot like it was last year.  I like defined seasons, with cold and some snow in winter, a mild/cool spring and fall (with flowers in spring and colorful leaves in fall), and then a warm summer so I can go swimming.  So, I’m excited that the weather is supposed to be nice next week!

Today’s recipe is a fairly popular/common meal.  I ate these Chicken Packets when I was growing up and I’ve known quite a few other families who make these rolls as well.  My family calls them Crescent Chicken Rolls and Casey’s family calls them Chicken Packets.  Since Chicken Packets is easier to say, I’m going with that title.  Every family seems to have their own spin on the recipe, so today you’re getting my version.

When Casey and I first got married, I was trying to learn what kinds of things he likes to eat.  He kept telling me about something called “Chicken Packets” that his mom makes and I could not for the life of me figure it out.  I finally realized that he was talking about the same thing I had eaten as a kid, and we just had different names for it.  Haha.

These rolls are one of his most requested meals.  Whenever I ask him, “What do you want for dinner this week”, I usually get one of four answers:  Chicken Packets, Cottage Pie, Fluffy Whole Wheat Buttermilk Pancakes (or waffles), and cereal.  If you ever invite us over for dinner and aren’t sure what to make, one of those options will definitely work!  Although, just for the record (lest anyone think we survive on these foods alone) we eat and enjoy a wide variety of other things too.  We’re not that picky. 🙂

Chicken Packets

  • Servings: 8
  • Print

Ingredients

  • 6 oz cream cheese, softened
  • 1/4 cup skim milk
  • 1 Tablespoon dried chives
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 cups chopped or shredded cooked chicken (or turkey)
  • 2 8-oz tubes refrigerated crescent dinner rolls

Directions

Preheat oven to 350 degrees Fahrenheit and lightly grease a large baking sheet.

In a large bowl, mix together cream cheese, milk, chives, onion powder, salt, and pepper.  Add chicken and stir until well combined.  Remove crescent roll dough from tubes and separate dough into 8 squares, (sealing the perforations between triangles).

Spoon about 1/2 cup of chicken mixture onto each square.  Pull corners of dough toward center and pinch edges of roll to seal around chicken mixture.  Place rolls on baking sheet.

Bake for 20-25 minutes or until golden.
