This super easy Slow Cooker Chili is great for a cold day when you don’t feel like cooking! 🙂
Well, folks, I just can’t wait any longer. Christmas decorations are going up this week! I’m planning to find some inexpensive, fun decor in addition to our usual Christmas tree, and make the house as festive as possible this year. 🙂 While at Wal-Mart last week, I bought a scented candle that smells like balsam and fir. I lit it the other day while working in the kitchen, and it reminded me so much of a real Christmas tree that I decided I was going to put up my decorations early this year!
So, I’m curious, for those of you who enjoy putting up a tree around the holidays, do you prefer a real or fake tree? I love the smell of a real tree, but fake trees are less messy/low maintenance and can be put up earlier because I don’t have to worry about the tree drying out and potentially burning our house down. Also, while some fake trees look really sad and, um, fake, there are some really beautiful ones available too! All that to say, we have a fake tree, and with a good quality balsam and fir scented candle nearby, I’m happy with it.
When I was a kid, I always wanted a real tree, but that was before I became a responsible adult with my own house and realized how bad it would be to catch said house on fire. (NOT to say that you are not a responsible adult if you prefer a real tree. Haha.) But, to be honest, it can be downright dangerous, and second of all, you have to deal with claims and insurance and blah, blah, blah. So, a fake tree it is! Oh, and I always turn the lights off before bed and use lights that don’t get hot after being on for awhile! Yes, I might be a little paranoid.
Anyway, after that completely random conversation (wasn’t really planning on posting about that, but ok), how about a chili recipe?
A big bowl of chili is one of my all time favorite meals for a crisp, fall day. When the chili can be thrown together in ten minutes and simmer in the slow cooker while I do other things, that’s even better!
I like to make my chili with ground turkey, but you can use beef or leave the meat out altogether for a vegetarian version. You can also try experimenting with different kinds of beans. Or, if you hate beans, try two pounds of beef or turkey instead of one and just leave the beans out. Whatever you enjoy!
Slow Cooker Chili
- 1 lb ground beef or turkey, uncooked
- 2 16 oz cans kidney beans, drained and rinsed
- 2 14.5 oz cans diced tomatoes, no salt added
- 2 cups water
- 1 red onion, chopped
- 3 Tablespoons plus 1 teaspoon chili powder
- 1 Tablespoon ground cumin
- 2 teaspoons garlic powder
- 2 teaspoons dried oregano
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon red pepper
Place all ingredients in slow cooker and stir several times to roughly combine. Be sure turkey or beef is spread evenly throughout mixture (not all in one clump).
Cook on low setting for 3-4 hours or until meat is cooked through. Serve with cheddar cheese and warm bread or crackers!
