Daylight Savings Time is over for this year, and I’m having a little trouble adjusting. You would think that an extra hour of sleep would leave me feeling energetic and ready to tackle this week, but no. Instead I just feel groggy and tired over here. Seriously, can we PLEASE do away with DST? It doesn’t accomplish anything and is just a nuisance for everyone involved.
Ok, I’m done complaining about DST. 😉
In other news, I very much enjoyed our church’s Fall Festival this weekend. 🙂 I baked way too many cookies and brownies, and I also made a cranberry apple pie, which I will soon be sharing on the blog.
I played frisbee with friends until my arm got tired, and am feeling it just a little bit today. (Right bicep…ouch.) Throwing a frisbee is one of the few sports related things that I can do decently well. As is my usual, I also attempted to join in the volleyball game and kind of failed (ok, I really failed). 😉 Volleyball is my nemesis. I’ve tried and tried to play it over the years and I just cannot hit that ball! I’m claiming that I have a depth perception deficit and therefore I can’t help it.
Anyway, we had a great time. Now my thoughts are moving ahead towards Thanksgiving, which is in just a few weeks!
I’ll plan on compiling a list of Thanksgiving-ish recipes from my website sometime over the next week or so. 🙂
Today, I’m sharing another bagel recipe! These are my favorite bagels, because anything with chocolate makes me happy.
I used a combination of whole wheat and almond flour to make the bagels filling and nutritious. They taste great with a little butter or cream cheese if you’re not going for healthy. 😉 Personally, I like my bagels plain most of the time.
Don’t let the idea of making homemade bagels intimidate you; they’re not that difficult once you get the hang of them!
Whole Wheat Chocolate Chip Bagels
Ingredients
- 1 teaspoon active dry yeast
- 1 1/4 cups warm, but not hot, skim milk (110-115 degrees Fahrenheit)
- 1/4 cup butter, softened
- 1/4 cup unsweetened applesauce, room temperature
- 2 Tablespoons honey
- 1 teaspoon salt
- 1 egg yolk
- 1 cup almond flour
- 3 cups whole wheat flour
- 1 cup dark chocolate chips
Directions
In a large bowl, dissolve yeast in warm milk. Add butter, applesauce, honey, salt, and egg yolk. Mix until blended. Add almond flour and chocolate chips and stir until combined. Add whole wheat flour until mixture forms soft dough. (You may need a little more or less flour than what is called for in recipe.) Turn dough out onto a floured surface and knead 6-8 minutes or until smooth and elastic. Place dough in greased bowl, and turn once to grease top. Cover with light towel and let rise in warm place 1 1/2 hours or until double.
Punch dough down and divide into 12 balls. Poke a hole in the center of each ball and stretch/shape dough until it forms a bagel shape. Let bagels rest for 10 minutes. Meanwhile, fill a large pot with water and bring to a boil. Drop bagels, 2-3 at a time, into boiling water and boil for 45 seconds each side. Remove carefully with a slotted spoon and let drain well on towel. Place bagels on lightly greased baking sheet (bagels can be touching). Bake at 400 degrees Fahrenheit for 20-25 minutes or until golden.
