Toasted Oats and Chocolate Snack Mix

Toasted oats, dark chocolate, and nuts are combined in this sweet and salty snack mix.

Good morning!  It got down to about 40 degrees here last night and we didn’t turn the heat on, so the house feels a little chilly.  I’m thinking some logs crackling in the fireplace and a cup of hot apple cider would be nice right about now.  It won’t be cold outside for long though, so if I were to build a fire I would already be warm again by the time the fire really got started! 🙂

Christmas is getting closer and closer, and I am so excited!  I love Christmas (have I only mentioned that 200 times before?).  I’m thinking that our Christmas tree is going to be up sometime in the next couple of weeks.  No, it’s not too early.  Don’t say that.  Don’t even think it.

Ok, here is my observation for this Monday:  Cooking and baking for more than one person is always interesting because even if said people agree on some foods, there is always something that one of them loves and the other hates.  I know that in writing a food blog, I will inevitably encounter people who like my recipes and some who don’t.  That doesn’t offend me because I know everyone has different tastes.  The only time I get offended is when my husband doesn’t like something I cook.  He is required, under all circumstances, to enjoy everything that I make or I will be very sad.  (Just kidding.  *cough*  But I do try harder to make yummy and healthy food for him than for anyone else, because I like him a lot.)

I was trying to come up with some new snack ideas that are on the range somewhere between healthy and not healthy, because that’s where Casey tends to land in his preferences.  As it turned out, he was kind of indifferent toward this recipe, but I liked it a lot!  When a snack contains peanuts, dark chocolate, and toasted oats, what’s not to like?  (In my personal opinion.)  For the record, I made his favorite granola bars this week, so that makes up for it. 🙂

This toasted oats and chocolate mix is very easy to make and would work well for a snack/treat on an ordinary day, or for a party.  I haven’t tried taking it to a party yet (we ate it all and we’re not the biggest partiers anyway), so if you do, let me know how it goes.

Feel free to change up the ingredients however you like.  If you don’t care for peanuts, try almonds or walnuts instead!  You could also try adding a little nut butter if you like, or maybe some dried fruit.  If you really want to turn the mix into a treat, try adding some M&M’s.  I know people will have leftover Halloween candy after tomorrow.  The possibilities are endless!

Toasted Oats and Chocolate Snack Mix

  • Servings: about 10
  • Print

Ingredients

  • 4 cups rolled oats
  • 1 cup lightly salted peanuts (or other nuts)
  • 2/3 to 3/4 cup Sucanat, to taste (whole cane sugar)
  • 1/3 cup butter
  • 1 1/4 cups dark chocolate chips (60% cacao or higher)

Directions

Place oats in large skillet over medium heat and toast for 5-7 minutes, stirring/flipping with spatula until fragrant and turning golden.  Remove from heat and pour into large bowl.  Stir in peanuts.

Meanwhile, combine Sucanat and butter in small saucepan over medium heat.  Let butter melt completely and then bring mixture to a boil.  Boil for 1 minute, stirring constantly.  Remove from heat.  Immediately add butter mixture and chocolate chips to oats and peanuts, and stir until chocolate and boiled mixture coats the oats and nuts.

Let cool completely before serving.  Store in refrigerator.
