This post is a little late because I was a bit distracted this morning. Yesterday evening, when I decided to roast some potatoes for dinner, I turned on the oven only to be greeted by a horrible electrical/burning plastic smell. Not cool (pun intended). I quickly turned the oven off and then the breaker because I was terrified of burning down the house.
Needless to say, I was a little bit lost without my oven and very sad that it wasn’t working. However, I’m thankful for family members (aka Grandpa) who are very good at fixing things and had the time to come over today and work on my oven for me! He discovered a loose connection at the back of the stove that was melting a plastic part and causing a terrible smell (not to mention dangerous). It is now fixed and my oven is smiling again. I’m excited to spend a little time doing some baking today, as soon as I finish sharing this quesadilla recipe!
I hear that Friday nights are pizza nights in some parts of the world. We have pizza at our house occasionally on Fridays, but it’s not a regular thing. If you haven’t noticed from the various other quesadilla recipes on my website, I have a penchant for stuffing all manner of fillings into quesadilla form. They’re quick and so delicious. The idea of making a pizza quesadilla was bound to occur sooner and later, and I am pleased with the result!
Plus, they’re easy to photograph. I much prefer taking pictures of photogenic foods than non photogenic ones. 😉
Enjoy some quesadillas!
- 4 whole wheat flour tortillas
- 2 Tablespoons butter
- 1 1/2 cups shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon basil
- 1/4 teaspoon oregano
- 1/4 teaspoon garlic powder
- 1/2 cup frozen, crushed spinach
- pepperonis (as desired)
Combine cheeses in a small bowl. Melt 1/2 Tablespoon of the butter in skillet over medium heat. Add one tortilla to skillet. Sprinkle one quarter of the cheeses and one quarter of the seasonings over entire tortilla. Place 1/4th of the pepperonis and 1/4th of the spinach over half of tortilla. Let cook until underside of tortilla is turning golden and crispy. Fold the half of tortilla with just cheese over the half with pepperonis and spinach. Press down with spatula. Remove from heat. Repeat process for remaining butter, tortillas, and fillings.
