The main emphasis of my blog is cooking and baking (obviously), but since I have so many interests I enjoy writing about a wide variety of other things in my posts in addition to sharing recipes. Once a week on Sundays I write a post specifically dedicated to other interests. Yesterday’s piece of writing was about a fascinating spider I found. I was a bit disappointed that said post wasn’t very popular, but not surprised. It’s a bit sad at times to have interests in things that no one else wants to talk about. I think Green Bottle Blue Tarantulas are beautiful, but if I dare mention that then everyone else just kind of looks at me cross eyed. (Haha.)
Oh, well. ‘Tis the life of a nerd. (Or a geek.) I’m really not sure into which classification I fit. My husband insists I’m a nerd, but I think I fall somewhere in between. (Whatever.)
Hmmm… I just noticed that it seems abnormally quiet around here this morning. The resident squirrels are usually very active at this time, running around on the roof and throwing hickory nuts. Today, however, they are silent. It’s a little worrisome. One has to wonder what they are up to. Building a bomb? Tunneling under the house? Holding a squirrel convention?
Anyway…
I’ve been trying to come up with more “30 minutes or less” meal ideas for busy people. Not everyone has the desire or time to spend an hour or two cooking dinner every day. I love to cook, but am also aware that I don’t have kids or a full time job outside the home right now. I do remember the days when I had a full time job, and when I got home from work the last thing I wanted to do was spend a lot of time in the kitchen (so I totally get it).
These Gouda Turkey Sandwich Melts are one super easy meal that I thought of last week. They only require six simple ingredients, and are delicious.
I used ground turkey in our sandwiches, but ground beef would work just as well. Also, if you don’t like Gouda cheese, then feel free to try a different kind such as cheddar or provolone! 🙂 (I may try that myself sometime soon to have a little variety.)
The hamburger buns you see are actually my homemade hamburger buns, which were another of last week’s experiments. I will post the recipe for those at some point as well. To everyone saying, “Look, Katherine, the point of a 30-minute meal is that I don’t have to make my own hamburger buns”, you have an excellent point and store bought buns will work just fine. I do recommend whole wheat though, as they are more nutritious and filling than regular white hamburger buns.

Gouda Turkey Sandwich Melts
Ingredients
- 1 lb ground turkey or beef
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 4 large whole wheat hamburger buns
- 8 slices Gouda cheese
Directions
Combine turkey or beef with seasonings in skillet and cook until browned/cooked through. Meanwhile, preheat oven to 350 degrees Fahrenheit.
In a shallow pan or baking sheet, arrange bottom halves of hamburger buns. Top each with 1/4th of meat and 2 slices of cheese. Top with remaining halves of hamburger buns.
Place in preheated oven for 10-15 minutes or until buns are toasted and cheese is melted.
