BBQ Chicken Quesadillas

Another addition to the long list of quick and easy dinner ideas, these BBQ Chicken Quesadillas are delicious and can be thrown together in less than 30 minutes.

First off, I promise that this is the last quesadilla recipe I’ll share for awhile.  I never get tired of quesadillas, but I assume that there are other people who do, and this is the 4th recipe that I’ve posted in the last few months.  (Easy and light summer meals, right?)

Now for the latest on Hurricane Irma (good grief, I sound like a weather reporter):  There is a lot of false information going around mixed in with the accurate reports, so be sure you’re reading from a good source.  The best place to look for information is the National Hurricane Center.  (Go here if interested.)  As of right now, Irma has a maximum sustained wind speed of 150 miles per hour.  While still a Category 4, this wind speed is putting Irma closer and closer to becoming a Cat 5 major hurricane (this would require wind speeds greater than 157 mph).  [Edit:  Right after publishing this blog post, I found that the latest update from the NOAA puts Irma’s maximum sustained wind speed at 175 mph, making it a dangerous Cat 5 Hurricane.]  Florida governor Rick Scott has declared a state of emergency for all 67 counties in Florida.  As we continue to move toward the weekend, we’ll be able to tell better which direction the storm is going to turn as it approaches the state.  Meanwhile, the Caribbean is bracing for impact.  It’s going to be a long week (to put it mildly).

I’m only spending a short time on my blog this morning as I have other things I need to go get done in preparation for a possible hit from this monster.  So, here are a couple of pictures and an easy recipe for you, and I’ll continue updating as the week progresses.

BBQ Chicken Quesadillas

  • Servings: 4 quesadillas
  • Print

Ingredients

  • 4 whole wheat tortillas
  • 2 cups cooked, cubed chicken
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup barbecue sauce
  • 2 Tablespoons butter

Directions

Melt 1/2 Tablespoon of the butter in skillet over medium heat.  Add one tortilla to skillet.  Sprinkle 1/4 cup each of mozzarella and cheddar cheese over entire tortilla.  Place 1/2 cup of the chicken over half of the tortilla and drizzle chicken with 2 Tablespoons barbecue sauce.  Let cook until underside of tortilla is turning golden and crispy.  Fold half with just cheese over half with chicken and barbecue sauce.  Press down with spatula.  Remove from heat.  Repeat process for remaining butter, tortillas, and fillings.
