Maple Blueberry Yogurt Pancakes

These delicious Maple Blueberry Yogurt Pancakes contain whole wheat flour, Greek yogurt, and lots of blueberries, and are lightly sweetened with pure maple syrup.

This has been an interesting week for sure, and the fact that so much has happened and we still have two days to go is making me slightly nervous.  In light of that, I made a small batch of cookies yesterday and am finding myself wishing I had more cookies today. 😉

One of the most noteworthy events was my husband’s car being hit by a tree branch.  A few evenings ago, we were trying to relax for awhile after a busy day, and suddenly a loud *smack* came from our driveway.  We looked at each other and then simultaneously jumped up and ran to the front door.  A tree branch had fallen on my husband’s windshield, hitting it with so much force that glass flew all the way into the back seat.  Part of the roof was damaged as well.  So, we called our insurance company, (bla, bla, yay, bla, ugh, bla), and it will be at least two weeks before the car will be fixed.  Despite the inconvenience, the event has gotten me thinking about just how grateful I am to have a car in the first place.

In addition to the car incident (though less significant), another evening I got bitten by something that appeared to be a mutant mosquito.  Its legs and body were black and white striped, and I’m fairly certain it had hair on it.   Oh, and I think I saw fangs too.  Yep, it was a brutal attack and I barely escaped with my life.  After that frightening experience, I am now trying to find a place in the world that doesn’t have mosquitoes.  So far the only option I’m seeing is Antarctica.  *begins packing Katherine’s and Casey’s bags*  Strange, we don’t seem to possess any winter clothes.  Can you wear shorts in Antarctica?

Being the curious person that I am, I had to know more about this monstrosity of a mosquito, so I did a little research.  It is called an Asian Tiger Mosquito and can grow to be a little over 1/4th of an inch in size.  To see a picture, go here.  I also discovered that an even larger mosquito exists, commonly known as the American Gallinipper mosquito.  Those things can be up to an inch long.  They do live in Florida, but I am very grateful to say that I have never been bitten by one.

Since Saturday is almost here and this week has been slightly stressful, I’m thinking that some sort of pancakes or waffles will definitely be in order tomorrow.  Last weekend I made a batch of these tasty blueberry pancakes and they need to happen again soon.

This recipe is another adaption of a recipe from my grandma.  There’s a reason I use recipes from my mom and my grandmas so much.  All three of them are great cooks and bakers!  I can honestly say that there are very few things they’ve made that I don’t like.

When I did the photo shoot for these pancakes, I decided to attempt to pour syrup over the pancakes while taking a picture at the same time without the use of a tripod.  That was interesting.  The syrup went everywhere and I ended up with enough syrup on my plate for three people.  (Oops.)  No, I didn’t eat it all.

Maple Blueberry Yogurt Pancakes

  • Servings: about 15 6-inch pancakes

Ingredients

  • 1 cup whole wheat flour
  • 1 cup unbleached, all purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups milk
  • 2 eggs, beaten
  • 1/4 cup pure maple syrup
  • 2 Tablespoons olive oil
  • 2 cups blueberries
  • 2/3 cup yogurt

Directions

In a large bowl, stir together flours, baking powder, baking soda, and salt until combined.  Add milk, eggs, maple syrup, and olive oil and stir just until mixed.  Fold in blueberries and yogurt just until combined.

On a moderately hot griddle or pan over medium heat, pour batter by 1/3 cupfuls and cook until underside is golden brown and bubbles form on top.  Flip and cook until other side is golden brown.  Serve drizzled with maple syrup or blueberry syrup!

    I’m thinking some blueberry syrup would be great on these! BTW we only have friendly, hairless mosquitoes here in AR so you guys could move here. Then we could all come over for breakfast on Saturday mornings!
