Baked Salmon Cheddar Oat Patties

Made with oats, cheddar cheese, salmon, and celery, Baked Salmon Patties are delicious and healthy.

Looking for a polarizing dinner option?  I’ll just say it:  these salmon patties are one of those “love it or hate it” foods.  When I came up with the recipe a few weeks ago, Casey walked into the kitchen, looked in the oven, and said, “What IS that?”  Whenever Casey responds to something I’m cooking with that comment, I can’t decide whether to laugh or throw him bodily out of the kitchen.

He did eat them, but politely informed me he isn’t a fan of the whole “meat in a patty idea”.  He said it feels like he is consuming something unidentified, and it makes him nervous.  On the other hand, I loved these salmon patties and was more than happy to eat the leftovers for lunch the next day.  So, I am sharing the recipe for the benefit of myself and others who may like them as well.  Anyone out there who agrees with Casey, feel free to eat your salmon in a different form.

Baked Salmon Cheddar Oat Patties

Ingredients

  • 10 oz. uncooked salmon fillet
  • 5 Tablespoons butter, divided in half
  • 1/4 cup chopped celery
  • 3 Tablespoons whole wheat flour
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • 3/4 cup skim milk
  • 2 cups rolled oats
  • 1/2 cup shredded cheddar cheese
  • 1 egg, beaten

Directions

Preheat oven to 450 degrees Fahrenheit.  Place salmon fillet on a lightly greased baking sheet and bake in preheated oven for 12-15 minutes or until salmon is cooked through.  Let cool slightly.  Turn down oven to 350 degrees Fahrenheit.

Meanwhile, melt 2 1/2 Tablespoons butter in large saucepan over medium heat.  Cook chopped celery in butter until tender.  Stir in flour, paprika, salt, and milk.  Continue to cook, stirring frequently, until mixture is thickened and bubbly.  Remove from heat and let cool slightly.  While mixture is cooling, flake salmon.  Stir salmon and oats into sauce, and then add shredded cheese and egg.  (You don’t want the mixture to be too hot or it will cook the egg.)

Form mixture into 8 patties and place on lightly greased or parchment paper lined baking sheet.  Drizzle with remaining 2 1/2 Tablespoons butter.  Bake for 15-20 minutes or until patties are golden.
