I don’t know about the rest of you that celebrate the 4th of July, but I am tired today! No, I didn’t party or stay up until midnight. My 4th of July consisted of mowing and weedwhacking my huge lawn, testing a new muffin recipe, and staying up until about 10:30 watching my neighbors’ display of fireworks. For dinner I made a casserole, and around 8:00 I taste tested one of my muffins and ate some green olives for a celebratory snack. Yep, I’m a real party person over here, and am feeling it today. *insert clip of Katherine laughing at herself*
With the heat outdoors and the fatigue I’m currently experiencing, I don’t particularly want to think about anything today. All I want to do is sit here and drink this Strawberry Mango Smoothie. Of course that isn’t going to work out because my house needs to be cleaned. That’s ok though. I don’t mind cleaning. I just don’t want to see a mower for awhile after spending two hours sitting on it yesterday.
Ok, guys, don’t tell my husband (or my in-laws; it’s their mower), but I might have hit a piece of concrete while I was mowing. I was just sailing along through the yard and all of a sudden a random piece of concrete jumped up out of the dirt and kicked the blades. (Seriously?) That mower is kind of like the Beverly Hillbillies version of a mower so I’m still in disbelief that it didn’t just fall apart into a bunch of pieces leaving me sitting in a pile of parts holding the steering wheel. *facepalm* If you’re thinking, “Beverly Hillbillies, what’s that?”, just google “Beverly Hillbillies car” and you’ll get a visual.
This smoothie is so photogenic that I’m having to suppress the urge to share ten pictures of it. I don’t want to put you all to sleep before you get to the recipe.
Besides, you only need five ingredients to create your own photogenic smoothie: 1 mango, some strawberries, almond milk, honey, and ice. Ok, one more picture…

Strawberry Mango Smoothie
Ingredients
- 2 cups frozen or fresh strawberries
- 1 mango, cut into chunks
- 1 cup almond milk
- 1/4 cup honey
- 2-3 cups ice (amount of ice needed may vary depending on whether your strawberries are fresh or frozen)
Directions
Place all ingredients in blender and blend until smooth. Serve!
Tip: Don’t put honey directly on ice as it will tend to harden up and will not blend into drink as easily.
