These five-ingredient, quick quesadillas are an easy and delicious meal for lunch or dinner!
This morning it occurred to me that I posted a picture of these quesadillas on Instagram about a week ago, announced, “Coming soon!”, and then proceeded to sort of forget about them. Oops. I do that sometimes.
I’m not really sure how I could forget these Easy Black Bean & Tomato Quesadillas considering how delicious they are, but it happens. Hopefully they’re not offended.
For those of you who celebrate the 4th of July, what are your plans? To be honest, my plans tomorrow include tackling the mowing and weed whacking that desperately needs to be done in my yard. Due to the ongoing rain and the fact that we don’t own a mower (we borrow one), our grass has morphed from simple grass into a dense tangle of vegetation that resembles something from a tropical jungle. Therefore, tomorrow my husband and I are gearing up and going forth to conquer it. If you don’t hear from me in a couple of days, send a search posse. Actually, don’t. You might never see them again either.
I like tasty and easy lunch and dinner ideas, don’t you? These quesadillas only require five ingredients: cheddar cheese, a can of black beans, tomato, whole wheat tortillas, and a little butter.
If you have any garden fresh tomatoes lying around, they will go perfectly in these quesadillas! Of course, you can always use store bought too. 🙂
One thing to keep in mind when making quesadillas: more is not better when it comes to the butter. Too much butter while “frying” will make your tortillas all soggy and icky. Trust me, you want crispy quesadillas with a hint of butter, not soggy quesadillas (gross).

Easy Black Bean & Tomato Quesadillas
Ingredients
- 2 cups shredded cheddar cheese
- 1 15.5 ounce can black beans, rinsed and drained
- 1 medium tomato, chopped
- 4 whole wheat flour tortillas (I used 10-inch tortillas)
- about 2 Tablespoons of butter (for frying)
Directions
Melt 1/2 Tablespoon of the butter in skillet over medium heat. Add one tortilla to skillet. Sprinkle 1/4th of the cheese over entire tortilla, and then place 1/4 of the beans and 1/4th of the tomato on HALF of the tortilla (this will make it easier to fold over). Let cook until underside of tortilla is turning golden brown and crispy. Fold the half with just cheese over the half with cheese, beans, and tomato, and press down with spatula. Remove from heat.
Repeat this process for remaining butter, tortillas, and fillings. Serve!
