Jumbo Chocolate Chip Oatmeal Cookie Sandwiches with Chocolate Cream Cheese Filling

“Healthier” jumbo chocolate chip cookies are made into sandwiches with dark chocolate cream cheese filling in between (the filling probably does not classify as healthy).

One day I decided that it might be a good idea to take my favorite Jumbo Healthy Chocolate Chip Oatmeal Cookies and smash them together with some dark chocolate cream cheese filling in between to make a delicious cookie sandwich.

It turned out to be a fabulous idea, and I feel the need to share it.

I was planning to post these cookies a couple of hours ago, but was delayed due to a crazy thunderstorm that occurred yesterday evening.  (And I do mean crazy.)  Casey and I actually drove through part of it, which probably wasn’t the smartest thing to do.  We experienced very close lightning strikes every five minutes, including one that blew up a transformer about 500 yards from us on the highway.  Our car got hailed on and the wind nearly blew us off the road (I’m only mildly exaggerating), and of course we got soaked running from our car to the building.  The wind was so bad that an umbrella wouldn’t have shielded us from a single raindrop.  When we got home later, we discovered that lightning had struck near our house and fried our modem.  Anyway, it was a fun evening and we’re supposed to get more storms today.  Seriously, it has rained almost every day for the last two weeks and the humidity has become a living entity of its own.  Welcome to summer in Florida!

So, while I have power and internet (this might not be the case later today haha), let me share this cookie recipe.

I mean, just look at that picture.  It’s a humongous healthy oatmeal cookie with dark chocolate chips and a dark chocolate cream cheese filling!!!

Since the cookies are on the healthier side, but the filling sort of isn’t, should I call them “half healthy”?  I’m not sure.  I don’t think I’ll waste time thinking about it though, when I could be spending that time eating one of these cookies instead.

Jumbo Chocolate Chip Oatmeal Cookie Sandwiches with Chocolate Cream Cheese Filling

  • Servings: 8 cookie sandwiches

Ingredients

Cookies:

  • 2 cups Sucanat (whole cane sugar)
  • 1/2 cup water
  • 2 eggs, beaten
  • 4 teaspoons vanilla
  • 3 1/2 cups whole wheat flour
  • 2 cups rolled oats
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup dark chocolate chips

Filling:

  • 1 cup dark chocolate chips
  • 8 oz cream cheese, room temperature
  • 1 cup powdered sugar
  • 2-3 teaspoons milk (as needed for desired thickness)

Directions

Preheat oven to 350 degrees F.

Combine Sucanat, water, eggs, and vanilla in large bowl and mix until blended.  In separate, medium-sized bowl, stir together flour, oats, baking soda, and salt.  Add dry ingredients to wet and mix until combined.  Fold in 1 cup chocolate chips.

Form dough into 16 balls and place a few inches apart on greased or parchment paper lined baking sheets.  Flatten each ball slightly with hands.  Bake for 10-14 minutes or until edges start to turn golden brown.  Allow to cool on cookie sheet for 5-7 minutes and then remove to cool completely on wire racks.

To make the filling:  Beat cream cheese with mixer until fluffy, about five minutes.  Meanwhile, place 1 cup chocolate chips in microwave safe bowl and microwave in 15-second bursts, stirring occasionally, just until chips are melted.  Add chocolate chips to cream cheese and continue to beat until well blended.  (Note:  If your cream cheese isn’t room temperature your chocolate chips will harden again when they come in contact with it, so make sure it isn’t still cold!)  Gradually add powdered sugar and beat until fluffy, adding milk as needed for desired thickness.

Spread filling on half of the cooled cookies, and top with remaining cookies to make sandwiches.
