This 4-ingredient Spicy Greek Yogurt Chicken is ideal for busy days. It’s simple and is ready to eat in only 35 minutes. Serve it with rice, tortillas, or tortilla chips, add a vegetable on the side, and done! Easy meal.
I love to cook and can spend hours in the kitchen, but I do enjoy meals with a shorter prep time as well. I’m sure you all do too, especially if you’re not crazy about cooking in the first place, get home late from work, or have a bunch of kids running around.
The only ingredients you need for this Spicy Greek Yogurt Chicken are 4-5 boneless, skinless chicken breasts, 1 cup salsa, 1 1-oz. package of taco seasoning, and 1/2 cup plain Greek yogurt.
If you have five extra minutes, try throwing together my homemade taco seasoning, the recipe for which I have included below. It tastes so much better than store bought, and that way you can control exactly what goes into your seasoning.
Our favorite way to eat this chicken is over whole wheat tortillas, but tortilla chips or steamed brown rice would be great options too. I like to throw in some green beans on the side to make it a complete meal. Enjoy!
Spicy Greek Yogurt Chicken
- 4-5 boneless, skinless chicken breasts, roughly chopped into bite-sized pieces
- 1 cup salsa
- 1 1-oz. package taco seasoning (or see below for my homemade seasoning)
- 1/2 cup Greek yogurt
Place taco seasoning in large zip-top bag. Add chicken pieces and shake to coat. Spray 10-inch skillet with cooking spray. Place chicken in skillet over medium heat and brown on one side, flip, and brown the other side. Pour salsa over chicken.
Cover and cook, stirring occasionally, for about 8-13 minutes or until chicken is cooked through. Remove chicken from heat and gently stir in sour cream. Serve over rice, tortillas, or tortilla chips.
Homemade Taco Seasoning
- 1 Tablespoon chili powder
- 1 1/2 teaspoons ground cumin
- 1 teaspoon salt
- 1 teaspoon paprika
- 1/2 teaspoon black pepper
- 1/4 teaspoon dried oregaon
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
Add all ingredients to small bowl and stir to combine OR add to small zip-top bag and shake to combine. Use as needed in recipe.
