Three-Cheese and Spinach Grilled Cheese Sandwich

Grilled cheese filled with cottage, mozzarella, and Parmesan cheeses, plus spinach and seasonings – easy and light meal!

Good morning, Monday!  It’s the start of another week.  That means my to-do list for today includes meal planning for the week and grocery shopping.  I’m so routine-oriented that one change in schedule can completely throw me off.  Last week I flew back from my trip to Arkansas on Tuesday, and for the rest of the week I was totally confused as to what day it was or what was supposed to be happening or who I was and why I even exist in the universe (partly kidding).

The fact that it’s Monday means you need a quick, easy, and super tasty meal like this Three-Cheese and Spinach Grilled Cheese Sandwich.  (Yes, you NEED it.  Don’t argue.)

Mozzarella, Parmesan, and cottage cheeses are all combined with spinach and basil to make the perfect, flavorful sandwich.  I also used homemade, crusty, sourdough bread which definitely upped the wow factor.  (I’ll be posting my easy bread machine sourdough bread recipe soon, so stay tuned for that.)

An amazing grilled cheese sandwich can make any day better.  A bad one…(well, we won’t go there. *shudder*)

This sandwich is definitely amazing, so be prepared for your Monday to turn into a fantastic day after you take a bite.  Unless you choose not to make the sandwich…in which case I can’t help you.

Casey’s descriptions of my cooking are always interesting and often helpful, so I’ll insert his brief review here:  “It tastes like pizza!”

There you go.  A healthy sandwich that tastes like pizza.  What more could you ask for?  It’s kid and adult friendly.

An added plus is that your kitchen stays cooler because you don’t have to turn on the oven.  I don’t know about where you live, but it is toasty warm and muggy down here in Florida, and has been for awhile.  Air conditioning is great, but sometimes it needs a little help.

We just had this sandwich for dinner last Thursday, but I am thinking it is definitely going to be on the menu again tonight, and maybe just repeated all summer long.

Three-Cheese and Spinach Grilled Cheese Sandwich

  • Servings: 2 sandwiches

  • 1/2 cup cottage cheese
  • 1/4 shredded mozzarella cheese
  • 1/4 cup cooked spinach (I used frozen and thawed slightly beforehand)
  • 1 Tablespoon grated Parmesan cheese
  • 1/4 teaspoon dried basil
  • dash of salt and pepper
  • 4 slices whole wheat bread
  • butter for grilling


Combine cheeses, spinach, basil, salt, and pepper in small bowl and stir until combined.  Lightly butter one side of each slice of bread.  Place bread slices on moderately hot skillet with butter sides up, until butter begins to melt and undersides are lightly toasted.   Flip 2 slices over with spatula so that butter side is facing down, and top each with half of cheese/spinach mixture.  Place remaining two bread slices on top of cheese/spinach with butter side facing up.  Grill each sandwich until underside is golden brown, flip, and grill until other side is golden brown.  Serve.
