Happy weekend, everyone!
I’ve been seeing a lot of recipes for delicious-looking, extra large cookies floating around, and I thought to myself, “We definitely need a healthy version of these”.
Although, this kind of begs the question: If a healthy cookie is made jumbo-sized, is it still healthy?
Hmmm… I’m saying yes! If you’re in doubt, you can just eat half. 😉
I’m finally feeling like myself again after that cold I had earlier this week, and yesterday I got to spend most of the day in the kitchen working on some new recipes. I can’t wait to share them with you guys!
Of course, the Healthy Jumbo Chocolate Chip Oatmeal Cookies had to be priority #1. 🙂
Doesn’t that picture just fill your heart with joy? I know it makes me happy. The only thing I’m not happy about is that we already ate all the cookies. Bummer.
Healthy Jumbo Chocolate Chip Oatmeal Cookies
Ingredients
- 1 cup Sucanat (whole cane sugar)
- 1/4 cup water
- 1 egg, beaten
- 2 teaspoons vanilla
- 1 3/4 cups whole wheat flour
- 1 cup rolled oats
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup dark chocolate chips
Directions
Preheat oven to 350 degrees F.
Combine Sucanat, water, egg, and vanilla in large bowl and mix until blended. In separate, smaller bowl, stir together flour, oats, baking soda, and salt. Add dry ingredients to wet and mix until combined. Fold in 1/2 cup chocolate chips.
Form dough into 8 balls and place a few inches apart on greased baking sheet. Flatten slightly with hands. Bake for 10-14 minutes or until edges start to turn golden brown. Allow to cool on cookie sheet for 5-7 minutes and then remove to cool on wire rack.
