Oatmeal Cookie Blueberry Bars! Yay!
Ok, enough dramatization.
To be honest, I was having a little trouble getting my act together that day and I thought this recipe was going to be a bit of a “fail” the first time. I did not have high expectations when I put these bars in the oven. So I was pleasantly surprised when they turned out to be just as delicious as I had imagined!
Despite the blueberries and oats, these tasty little bars are certainly not in the “healthy” classification, but that’s ok. Indulgent desserts have their place in life. 😉
We start with a buttery, oatmeal cookie-like crust, and then top that with a layer of blueberries and gooey sweet deliciousness (yep, that’s what I’m calling it…the gooey sweet deliciousness layer).
Ok, how could I take all of those pictures and not resist taking a bite? Don’t judge. You would do the same thing. 🙂
Oatmeal Cookie Blueberry Bars
Ingredients
Cookie Crust:
- 3/4 cup butter, softened
- 3/4 cup packed light brown sugar (or Sucanat works well in this recipe)
- 1 1/2 cups flour
- 1 1/2 cups quick or rolled oats
- 3/4 teaspoon baking powder
- 1/4 teaspoon salt
Blueberry Layer:
- 2 cups fresh or frozen blueberries
- 2/3 cup butter, softened
- 2/3 cup sugar
- 2 eggs
Directions
Preheat oven to 375 degrees F. In a large mixing bowl, cream 3/4 cup butter and brown sugar together until fluffy. In a separate bowl, combine flour, oats, baking powder, and salt, then add to creamed mixture and mix until blended (mixture will be crumbly). Press into a lightly greased 9×13 baking dish. Bake for 10-12 minutes.
In the meantime, beat 2/3 cup butter and sugar together with mixer until blended. Add eggs and beat well.
Sprinkle blueberries evenly over hot crust, and then pour egg mixture evenly over blueberries.
Return to oven and bake at 375 for 20-28 more minutes or until edges are golden brown and center is set. Remove from oven and let cool completely. Cut into bars.

Those look really good! And since you mentioned indulgence, what about adding some cream cheese to the GSD layer? Of course in my book cream cheese makes just about any dessert better!
