Double Chocolate and Peanut Butter Granola Bars make for delicious and healthy snacking!
Regular homemade granola bars are so last month. Now we’re talking Double Chocolate Peanut Butter Granola Bars. (Oh, yeah.)
I did a lot of baking last week. We don’t have a dishwasher, so this means washing lots of dishes by hand. Sometimes I feel like I wash dishes all day long, and stopping occasionally to dry them just feels like a waste of time. So I stack dishes next to the sink as high as I possibly can without them falling. I consider it a challenge to see how high I can get the stack without all of the dishes crashing to the floor. (Please note: I never, ever stack glass dishes. That would be bad.)
Anyway, the day I made these granola bars I had a lot of baking projects going on, and as I was washing and stacking the bowls I was thinking, “These granola bars had better be worth it”. Well, they are.
I like my original granola bars recipe a lot (you can get that here), but these granola bars are on a whole new level.
Generally, a combination of chocolate and peanut butter is a no-brainer. It just makes everything better.
Double Chocolate Peanut Butter Granola Bars
Ingredients
- 3 cups quick or rolled oats
- 1/4 cup cocoa powder
- 2 Tbsp hemp seeds (optional, I like to add them for extra protein)
- 1/4 teaspoon salt
- 1/2 cup honey
- 1/2 cup applesauce
- 1 egg
- 1 teaspoon vanilla
- 1/2 cup peanut butter (or any nut butter)
- 3/4 cup dark chocolate chips
Directions
Preheat oven to 350 degrees F. In a large bowl, combine oats, cocoa powder, hemp seeds, and salt. In a separate, smaller bowl, whisk together honey, applesauce, egg, and vanilla. Add to dry ingredients and stir well. Stir in peanut butter and chocolate chips.
Press into a lightly greased 9×13 baking dish and bake 20-25 minutes or until edges start to turn golden brown. Remove from oven and let cool completely. Cut into bars.
