Whole wheat noodles and chicken are combined with a creamy white sauce that contains just a hint of Parmesan.
Everyone needs options for quick, easy, and healthy(ish) comfort meals.
This Chicken Tetrazzini fits that description. It’s even made in the microwave, so you don’t have to bother with turning on your oven. With the chicken cooked ahead of time, this dish can easily be thrown together in about 15 minutes, which is super convenient.
Turkey also works well in this recipe. My mom likes to make this dish shortly after Thanksgiving, in order to use up all that leftover turkey.

Anyway, this Tetrazzini is actually one of my husband’s favorite meals. One time I made a large amount of it (and I mean a lot), and he happily showed me that he will eat it for multiple days in a row without complaint.

Quick Chicken (or Turkey) Tetrazzini
Ingredients
- 1/4 cup butter
- 1/4 cup whole wheat flour
- 1 cup chicken broth, reduced sodium
- 1 cup skim milk
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup grated Parmesan cheese
- 4 cups cooked, chopped chicken or turkey
- 8 oz. whole wheat spaghetti noodles, cooked and drained
- 4 oz. sliced, cooked fresh or canned mushrooms, optional
Directions
Melt butter in microwave in large bowl. Mix in flour, microwave one minute, and stir well. Slowly add in chicken broth and milk, add salt and pepper, and use whisk to blend well. Microwave 5-6 more minutes, stirring occasionally. Once mixture is thickened, stir in Parmesan cheese. Next add cooked chicken, spaghetti noodles, and mushrooms and stir to coat well. Microwave about 3-4 more minutes, or until heated through.
