This Easy Crustless Spinach Quiche contains eggs, cheddar cheese, milk, and spinach, requires minimal prep, and can be either baked or microwaved.
I’m currently a stay-at-home wife. I’ve been a Physical Therapist Assistant for almost six years, but recently quit my job to stay home for awhile. With the amount of projects around our house and property, working on my cooking/baking blog, and activities with my church, I stay very busy. I was a little concerned when I quit my job that I would get bored and probably end up back at work soon, but in some ways I’ve become even more busy. I like it! Yesterday I tackled some yard work and experimented in the kitchen, both of which I really enjoy doing.
Although, please remind me to never, ever weed whack in shorts again (that was a very bad idea).
Yesterday’s kitchen experimentation wasn’t as productive as I had hoped, unfortunately. I had a new recipe idea and my first try was a bit of a flop. Oh, well. It happens.
After my busy day and “kitchen flop”, I wanted an easy dish for dinner and this Spinach Quiche was perfect. My mom got the recipe from someone she used to go to church with years ago. They referred to it as, “Tired Teacher Meal”. 🙂 It’s a great option for busy weeknights!
Easy Crustless Spinach Quiche
Ingredients
- 4 eggs, lightly beaten
- 1 cup skim milk
- 1 cup shredded cheddar (or mozzarella) cheese
- 1 16 oz package frozen, chopped spinach, thawed and lightly drained
- 1 Tablespoon whole wheat flour
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Directions
Combine all ingredients in large bowl. Pour into greased baking dish. You can either bake this quiche or microwave it if you’re in a hurry. If microwaving, be sure your dish is microwave safe. Microwave for 17-20 minutes or until knife inserted in center comes out clean. My microwave takes 17-18 minutes. To bake, heat oven to 375 degrees Fahrenheit and bake for 40-50 minutes or until set. Cooking time may vary depending on your oven. Let stand for 5 minutes before serving.

the flops are always a bit rough! especially when you’re soooo sure that it will work. sigh. this sounds like a foolproof, cozy, tasty way to round out your day though (:
