These whole wheat homemade breadsticks contain a hint of Parmesan cheese and are seasoned with Italian seasonings.
Last night’s dinner was hearty chili. When I eat chili, having whole grain rolls or bread sticks on the side is kind of a must. These Italian breadsticks are adapted from a recipe of my mom’s. They are simple, but tasty and filling.
This recipe makes a lot of breadsticks for the two of us. I like to freeze some of them to go with other soups later. 🙂
Whole Wheat Italian Breadsticks
- 1 1/2 cups warm (not hot) water
- 1 packet active dry yeast
- 1 Tablespoon honey
- 3 Tablespoons olive oil
- 3 1/2 cups whole wheat flour
- 1/4 cup finely grated Parmesan cheese
- 1 1/2 Tablespoons Italian seasoning
- 1 Tablespoon dried parsley
- 2 teaspoons garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried basil
- 1 teaspoon salt
Dissolve yeast in warm water with honey. Let stand for 5 minutes. Meanwhile, mix flour, Parmesan cheese, Italian seasoning, dried parsley, garlic powder, onion powder, basil, and salt together in a large bowl. Add olive oil and yeast mixture to dry ingredients and combine until mixture forms dough. Knead for about 3-4 minutes on lightly floured surface (just as much flour is needed to prevent sticking). Place dough in bowl, cover with towel, and let rise in warm place until doubled in size, about 1 hour.
Roll dough out into long rectangle on lightly floured surface and cut into about 20 strips (I use a pizza cutter). Place on lightly greased OR parchment paper lined baking sheets and bake at 400 degrees F for 12-15 minutes or just until golden. Serve alongside soup or chili.
Alternate instructions, to make these breadsticks sourdough: The night before, remove sourdough starter from refrigerator. In a large bowl, mix starter, 1 cup of the warm water, and just enough flour to maintain a batter-like consistency. Cover loosely with towel and let sit overnight. When ready to make breadsticks, dissolve yeast in remaining 1/2 cup warm water with honey and let stand for five minutes. Meanwhile, combine remaining flour, grated cheese, and seasonings in separate bowl. Add olive oil and yeast mixture to sourdough starter mixture; then add dry ingredients. Proceed with rest of recipe as usual.
