So, Casey and I like tater tots (hey, they aren’t just for kids). Sadly, as delicious as they may be, they really aren’t something that we need to be eating on a frequent basis. The other week I came across this Baked Cauli-Tots recipe over at Cupcakes and Kale Chips.
We gave them a try last week as a side to our pan-seared salmon. They are a tasty alternative to tater tots and we enjoyed them! I will definitely be making them again in the future. Plus, they are so easy. With an ice cream scoop and a mini-muffin tin, that made for some fast meal preparation! I think I may try that with our favorite Zucchini Tots recipe too (recipe here).
Oh, and ketchup is a must (because, well, ketchup)!
